- Expiration Date: Typically refrigerated caviar lasts 4–6 weeks, pasteurized lasts longer
Traceability & Sustainability
- Wild caviar trade is highly restricted due to overfishing; most legal caviar is from farmed sources.
- Ethical and sustainable caviar production follows Aquaculture Stewardship Council (ASC) or Friends of the Sea (FOS) standards.
Trade & Import/Export Rules
- The EU, USA, China, and Russia have strict rules on caviar imports, requiring documentation and customs clearance
- Black market caviar trade is illegal and subject to heavy fines.
